7 One-Pot Recipes and Traybake to Make Weeknights Easy

It’s 6pm and everyone’s hungry. But there’s piles of stuff everywhere: gym kits and homework, breakfast plates that still need to be put away. The decibels are rising. Your patience is thinning.

Sound familiar? Then you know as well as we do that the last thing any hangry home needs is more work right now.

It’s time to let go of the hectic and embrace the luxury of a bung-everything-in dinner. Our one-pot meals are the healthiest, easiest, and tastiest one-pot recipes around. All you need is one pot or one pan. And get ready to soak up all the compliments.

Why one-pot recipes are good for busy people

When it comes to weeknights, we think one pot meals are the solution to pretty much everything. Why? Well the clue’s really in the name. With one-pot recipes you get to enjoy:

  • Less preparation time
  • Less peeling time
  • Less washing up time
  • More chuck everything in/bung in the oven/leave on the hob time
  • More new flavours to try and old favourites
  • More you time (dare to imagine 30 extra minutes for a bath?)

…and you get a great-tasting, nourishing dinner at the end of it.

Cooking one-pot meals for leftovers

One-pot meals aren’t just for busy families. If you’re a lover of leftovers (like us) then take a load off with batch cooking where you still get quick-as-a-flash dinners using one pot or pan, with plenty for the next day, or ready to pop in the freezer for another.

Four one-pot recipes you won’t want to live without

For winter this year, our chefs wanted to introduce you to those sort of one-pot-recipes every busy home would want on rotation.

From juicy chunks of sustainably sourced salmon with leeks, to a healthy fish chowder that’s so heartwarming and filling the kids will thank you for it, there are two pasta dishes – one for meat-eaters and one that’s plant-based (though you’d never know) – these one-pot recipes don’t take hours to cook. Ready to let the compliments sink in?

One-pot Pork & Leek Pasta

Everyone loves a one-pot meal – and this one involves pasta. Sizzle free-range British diced pork with tender leeks, crunchy tenderstem and vitamin-dense spinach. Swirl of cashew cream. Handful of fresh-cut dill. Pinch of nutmeg. Perfect penne pasta, coming right up.

Cheesy Cajun-style Fish Chowder

We’re making sure no kids leave the dinner table hungry with this healthy and filling fish chowder. Studded with fluffy potatoes, vitamin-rich carrots and sweetcorn. Add cajun spice for kick. Lemon juice and fresh-cut spring onions for zing. Cashew parm cheez for that cheezy finish.

One-pot Vegan Chilli Pasta

A one-pot meal so you can spend more time doing everything else. Bung everything in a pot – and relax. Protein-packed kidney beans get a punch of spice, bubbling away with tomatoes and veg. Served over brown rice penne and finished with creamy yoghurt for the win.

One-Pot Creamy Salmon & Leek Bake

Dinner doesn’t get easier than this one-pot bake. Starring sustainably sourced salmon, packed with omega-3. Stir in creamy leek and potato then simmer with cashew cream, spinach and peas for a classic warming stew. Garnish with fresh-cut dill to give it all a lift.

Three traybakes everyone will love

Who doesn’t love a traybake? From earthy mushrooms and umami flavours, and sustainably sourced hake with Indian spices, to the easiest chicken ‘bake with aubergines and a substantial salad with vitamin-C-rich blood orange (so seasonal), these traybakes are where it’s at.

Teriyaki Mushroom Bake

We take our favourite teriyaki sauce and turn it into a moreish mushroom traybake. Nutrient-rich oyster and chestnut mushrooms bake away under a creamy sweet potato mash. Add a sprinkle of peanuts and your one-pot meal is ready.

Spiced Hake with Roasted Cauliflower Traybake

You’re going to love the flavours we’ve packed into this vibrant traybake. West Indian spiced hake plus a fresh raisin and coriander salsa. Served over a bed of tikka-roasted cauliflower, lentils, tomatoes and vitamin-dense kale. So easy to make, and even easier to enjoy.

Spiced Chicken Traybake with Blood Orange Salad

The traybake to please all the family. Free-range chicken breasts, flavoured with za’atar and plenty of garlic, bake away till juicy and tender with gooey aubergines. A zippy rocket and blood orange salad, sprinkled with toasted almonds, on the side to bring the green.
