
Baked oats have been around for a while now, but if you’ve never tried them well now is the time! This is wintery and warming and a great one to make over the holiday season when mornings are a little more leisurely. We like to serve it simply with some creamy yoghurt but you could also a little fruit, if you like.
Ingredients
- 280g sweet potato, peeled and cut into chunks
- 180g porridge oats
- 1 tbsp ground flaxseed
- 1 ½ tsp ground sweet cinnamon
- 1 tsp baking powder
- 100g crushed pecans
- 150ml milk [dairy or dairy-free]
- 50ml maple syrup [plus an extra drizzle to serve]
- Yoghurt, to serve
Instructions
[1] Begin by boiling the sweet potato chunks on a medium heat for 15-20 minutes or until soft. Meanwhile, preheat the oven to 180ºc.
[2] Once the potatoes are soft, drain and add to a large bowl.
[3] Next, to the bowl, add the porridge oats, ground flaxseed, ground cinnamon, baking powder, ½ the crushed pecans, milk, and maple syrup.
[4] Give it a good mix and then empty the mixture into a small ovenproof dish.
[5] Top with the remaining crushed pecans and then bake in the oven for 25 minutes.
[6] Allow to cool for 5 minutes before slicing and serving with yoghurt and an extra drizzle of maple syrup, if you like. Enjoy!
