Apple Pie Oat Squares – The Food Medic


The perfect little recipe to welcome in autumn and with it – apple season. These are great as a breakfast on the go, maybe with some yoghurt? Or turn it into a dessert and serve with your favourite ice cream!

Serves: makes approx. 9

Ingredients

  • 100g jumbo oats
  • 110g porridge oats [you could also use 210g porridge oats instead of the jumbo oats]
  • 80g wholemeal flour
  • 2 tbsp ground flaxseed
  • 50g light brown sugar
  • 1 ½ tsp ground cinnamon
  • 220g apple sauce
  • 100ml milk [dairy or dairy-free alternative]
  • 2 small apples, both cored, 1 cut into small chunks, 1 thinly sliced

Instructions

[1] Preheat the oven to 180ºc and line an 8inch ovenproof dish or baking tin with parchment paper.

[2] In a bowl combine the jumbo and porridge oats, wholemeal flour, ground flaxseed, light brown sugar, and ground cinnamon.

[3] Then add the apple sauce and milk and combine again.

[4] Fold through the apple chunks and empty the mixture into the dish. Flatten into the corners and gently push the apple slices into the top. 

[5] Bake in the oven for 25 minutes. Allow to cool for at least 15 minutes before removing from the dish and slicing.
