Brownie breakfast bars – The Food Medic


Brownies for breakfast? Oh yes, you read that right! Ok so these aren’t like you regular dessert brownies, but they are chocolatey, delicious, and will make you happy! Serve them with your favourite yoghurt and some fresh berries/fruit for a great weekday breakfast or even a little snack.

Serves: makes 12

Ingredients

  • 200g porridge oats
  • 70g plain flour
  • 30g ground flaxseed
  • 50g cacao powder
  • 4 ripe bananas, mashed
  • 100g smooth peanut butter

Instructions

[1] Preheat the oven to 180ºc and line or grease a rectangular baking tin.

[2] In a bowl combine the oats, flour, ground flaxseed, and cacao powder and give it all a mix.

[3] Make a well in the middle of the mixture and add the mashed banana and peanut butter.

[4] Mix until everything is combined well, then empty the batter into the baking tin. Spread into the corners and flatten/smooth the top before baking for 20 minutes.

[5] Allow to cool for 10 minutes before slicing. Enjoy!
