
Holiday food just hits differently, and the infamous greek salad is no different. There’s something about the sweet, juicy tomatoes; cool, crunchy cucumber; and salty feta and olives that is just so delicious! This our recipe to try and bring a bit of that Greek summer to our lunchtimes. We’ve added chickpeas to make it a little more substantial and stand up as a lunch in itself but it’s also delicious as a side to your summer BBQ or picnic spreads. It’s also one of the most simplest recipes that it almost doesn’t warrant a whole recipe, more just an assembly of delicious things!
Ingredients
- 2 tin of chickpeas, drained and rinsed
- 200g cherry tomatoes, halved
- ½ cucumber, diced
- 1 medium red onion, halved and finely sliced
- 120g kalamata olives, pits removed
- 150g feta cheese, cut into small chunks [dairy or dairy-free]
- 1 ½ tsp dried oregano
- 1 ½ tbsp extra virgin olive oil
Instructions
[1] In a large bowl simply combine all of the ingredients and mix until everything is combined well and covered in the lemon, olive oil, oregano dressing.
[2] Divide between the plates or portion into lunchboxes and enjoy!
