

Organic. Slow-cooked over 24 hours. Oh-so-good for the soul. Give Chef James’ pulled chicken pho a go!
You’ll need…
- Mindful Chef Chicken Broth
- 3 mushrooms
- 2cm ginger
- 2 garlic cloves
- 2 spring onions
- 1 lemongrass
- 1 pak choi
- 5g coriander
- 1 chilli
- Leftover chicken (cooked 100g)
- 50g noodles
Step 1: It’s prep time
Finely slice the mushrooms, ginger, garlic, spring onion, pak choi, coriander and chilli. Bash the lemongrass with the back of a knife.
Step 2: Get cooking
Bring the broth to the boil, add all the ingredients except the spring onion and 1/2 the coriander and simmer for 7-8 mins.
Step 3: Plate up
Pour the pho into a bowl and garnish with the remaining spring onion and coriander.
